Healthy Carrot Muffins

These healthy muffins are the perfect way to get your picky eaters to eat their carrots!



  1. Preheat oven to 350 degrees.
  2. Start by steaming the carrots.
  3. Once soft, blend in a food processor until the consistency of baby food or grate them.
  4. You want one cup of carrot total.
  5. Combine dry ingredients (flour, sugar, baking powder, baking soda, salt and cinnamon).
  6. In a separate bowl, combine carrot puree, eggs, oil, and vanilla.
  7. Fold wet ingredients into dry and stir till just moistened.
  8. Scoop into muffin tin, with muffin liners or by spraying a muffin tin.
  9. Bake for 18-20 minutes at 350 degrees.
